Mais con Yelo
Ok I know what you’re thinking, corn in a dessert? Isn’t that weird? I swear it tastes delicious!…Unless you’re a corn hater but still, so yummy. Anyhoo, last night my friend was craving mais con yelo which is essentially corn with ice and condensed and/or evaporated milk. She inspired me to make my own since I had all the ingredients at home. I never made my own because I wasn’t sure how to crush the ice without an ice crusher. I was an absolute idiot because my friend told me I could just crush the ice with a blender. Isn’t she a genius?!
So I recruited my boyfriend to use his immersion blender to crush the ice and then I made us some mais con yelo. I looked up some recipes to get the general idea on the ingredients. There’s some recipes that use only evaporated milk, a mix of cream corn and regular corn, and some add corn flakes. I decided to use only cream corn and a mix of evaporated and condensed milk and no corn flakes. I also had leftover evaporated and condensed milk because I didn’t use the entire can.
Recipe:
(makes approximately 3 cups)
Ingredients:
One can of cream corn
Approx. 1/2 cup evaporated milk
Approx. 1/3 cup condensed milk
3 cups of crushed ice
Steps:
Get a glass to put everything in.
Put a couple spoonfuls of cream corn.
Put a couple spoonfuls of crushed ice.
Pour the mix of evaporated and condensed milk.
Repeat steps 2-4 until glass is full.
Mix and enjoy 😊
