Chocolate Banana Muffins
Hey foodies!
I haven’t baked in FOREVER because I’ve been busy with books and work. However, we had one sad little overripe banana at home that nobody wanted to eat, so I decided to Google recipes that use only one banana. I found this recipe from the blog Dessert for Two for Chocolate Banana Muffins and decided to try baking them.
The recipe was super easy to follow and you can make it in one bowl and you don’t even need a mixer! Yay for less dishes to wash and less mixing for my weak arm muscles. One change I made was using dark chocolate chips instead of semi-sweet chocolate chips because I live with people who love dark chocolate more. I also didn’t add the extra chocolate chips on top of the muffins like the recipe recommends, because I felt like it would be too sweet and nobody in my house aside from me has a sweet tooth.
This recipe makes 6 muffins since it only uses one banana, but you can always double or triple the yield depending on how much ingredients you have. Next time I make this I’ll definitely double it so I can use my whole muffin pan and I’ll have more leftover for snacks throughout the week.
