Hello fellow foodies!

About 2 weeks ago I baked these Saskatoon berry jam filled muffins for my boyfriend and his famjam. His parents had given us a huge jar of saskatoon berry jam but nobody in our house eats jam too often and I’m not a huge fan of it. I decided to use it in baking instead so we might have a chance of actually finishing the jar. I looked up a recipe for basic muffins and decided to pipe in the jam when they were done baking.

Disaster struck when this little idiot, aka me, accidentally put baking soda instead of baking powder into the muffin mix. I realized my mistake too late, after I had already put the muffins into the oven. The result was mountainous muffins which were super chewy and sticky inside. Needless to say, these were a huge fail so I dumped them and decided to try again.

The second batch went way better because I actually followed the recipe. So the muffins turned out great, just how I wanted them to. The new challenge was piping in the jam. Again, my idiot self forgot that jam has whole berries in it which makes it hard to pipe out of a small hole. I had already filled the piping bag with the jam so I was at the point of no return. I decided to just go for it… and boy did I regret it! The berries kept getting stuck in the piping tip so I stuck a toothpick into the hole to try to pry the berries out. This did not work too well because jam would just spray everywhere when I’d pipe. After what felt like an eternity I finally managed to pipe the jam into all the muffins. I called my boyfriend to come try them and he ended up walking into a crime scene - me standing in the kitchen with goopy jam covering my hands and arms 😂

Luckily, everyone who tried my muffins said they tasted really yummy and sweet, so that’s a win for me. I hope they really enjoyed them though because I am NEVER making these again 😂
