Read S'more: Recipe Edition

Happy autumn my spooky dudes!

I’m back with a fun fall post full of ooey, gooey, goodness. I teamed up with @Princessreadsalot and @sushirainbow once again to bring you all a post about s’mores and the many delicious ways you can make them! You can check out this link to @sushirainbow’s blog where they have posted each s’more with a matching book recommendation. Now just a disclaimer, some of the s’mores on this post were purchased and not homemade, but if you are looking for a challenge or your kitchen is more accessible than a store right now, then I’ve posted some fun recipes you could try. So here’s some recipes to help you read s’more 😜

Jk, before I start listing recipes I just want to acknowledge that not everybody has access to a campfire, so here are some ways to roast marshmallows safely in your home. One way that is 100% safe is roasting them in your oven using the broiler function. Here is a recipe for oven-roasted s’mores. You can also roast marshmallows on your gas burner or electric coil stove. I never knew you could roast them on top of an electric stove, but apparently it works! Let me know if you try this method and how it works out for you. Just hold the marshmallow skewer a couple inches over the electric coil and roast it. If you roast them on your gas burner, make sure there’s the flame and not just gas coming out lol and keep the marshmallow on a skewer at least a few inches away from the flame so it roasts evenly. Don’t forget to turn off the burner when you’re done! Here is a recipe for gas burner s’mores. Some people suggest roasting marshmallows over a lighter or candle flame, but I wouldn’t recommend it because there are risks and toxins involved, so it’s better to be safe than sorry. If you must use a candle, people suggest using a non-toxic and unscented candle such as a soy or beeswax candle. Now we can move on to the recipes 🥳

Sugar Skull S'more (2 Ways)

@Princessreadsalot found these cute marshmallow skulls from the brand “Peeps” and used them for this s’more. You can buy them from this link here. This is a link to a recipe if you are feeling creative and would like to make your own skull marshmallows. You can also add sprinkles to a regular marshmallow to make a skull face or just draw on a marshmallow with icing.

Ingredients: 

  • Animal Cookies (Or multicolored cookies)

  • Sugar Skull Marshmallow (ours is from Peeps)

  • Chocolate

Directions:

1st Way:

  1. Add a chocolate square to a cookie, then add the marshmallow, and finally add a cookie on top. (Basically make a sandwich with the chocolate and the marshmallow between the two cookies.)

2nd Way: 

  1. Add a handful of cookies to a baggie and smash and add smashed cookies to a bowl.

  2. Add marshmallows to a skewer. 

  3. Melt chocolate in a bowl. 

  4. Dip marshmallows into chocolate and then cookies.

Earl Grey S'mores

For this recipe, @Princessreadsalot made shortbread cookies and added a tablespoon of loose leaf earl grey tea. Then, she made a sandwich with a few bars of chocolate and a chocolate earl grey marshmallow. There are recipes online for making your own marshmallows, but luckily she found a candy store that sold them. Here is a link if you would like to make your own marshmallows!

(This recipe makes about 8 cookies. Double it for more.)

Ingredients for Earl Grey Shortbread:

  • 1 cup all-purpose flour

  • 1 tablespoon loose Earl Grey tea leaves

  • ¼ teaspoon salt

  • 6 tablespoons confectioners' sugar

  • 1/2 teaspoon pure vanilla extract

  • 1/2 cup (1 stick) butter, room temperature

Directions for Earl Grey Shortbread:

  1. In a food processor, pulse together the flour, tea, and salt, until the tea is just spotted throughout the flour. Add the confectioners' sugar, vanilla, and butter. Pulse together just until a dough is formed. Place dough on a sheet of plastic wrap, and roll into a log, about 2 1/2-inches in diameter. Tightly twist each end of wrap, and chill in refrigerator for 30 minutes.

  2. Preheat oven to 375 degrees F.

  3. Slice the log into 1/3-inch thick disks. Place on parchment or silpat lined baking sheets, 2 inches apart. Bake until the edges are just brown, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks and cool to room temperature.

  4. Once cookies are cooled (or not, depending on how gooey you want them), make a s’more with 3 squares of chocolate and a marshmallow and enjoy!

Donut S’mores

This was a fun s’more to make because there’s so many possibilities! You can make this with literally any donut you want and any chocolate and marshmallow combo. You can buy the donuts or make them yourself (here’s a recipe for s’mores donuts). I bought donuts instead. I got a salted caramel donut from Boule Boule while I was on my vacation in Montreal because I love all things caramel. I didn’t add any chocolate for this s’more because it already had the caramel in the donut.

Ingredients:

  • Any donut you want

  • Marshmallows

  • Chocolate or caramel or both

Directions:

  1. Cut donut in half.

  2. Roast marshmallows and melt chocolate or caramel.

  3. Assemble s’more and put the chocolate, caramel, and marshmallows inside the donut like a sandwich. Enjoy!

Caramel Apple S’mores

This was one of my fav s’mores to make because the tartness of the apple really compliments the sweetness of the caramel and marshmallows. I was going camping and wasn’t sure about what caramel to bring for this recipe because I wanted something that would melt easily. I never thought of using caramel syrup, which would have been really convenient and easy to use, instead I bought some of Werther’s Soft Caramels and used those. When I roasted my marshmallows over the fire I would take a soft caramel and squish it so it was super flat, then wrap it around my marshmallow so it would melt as I roasted it. It worked really well and made the s’more extra gooey. I also didn’t put chocolate because it would’ve been way too sweet for my liking, but you can definitely include some.

Ingredients:

  • Apples (I used 1 medium apple and managed to make 3 s’mores from it. You can also use Granny Smith apples if you want them extra tart, but any apple should work)

  • Marshmallows

  • Caramel

  • Any kind of chocolate

Directions:

  1. Slice apples into thin circles so you can put the filling inside like a sandwich.

  2. Roast the marshmallows. (If you use the soft caramel instead of syrup then also roast the caramel with the marshmallows)

  3. Assemble the s’more with an apple slice on the bottom, then the chocolate, marshmallows, and caramel, and top it off with another apple slice. Enjoy!

Beignet S’mores

I was still on vacation and didn’t have the means to make my own beignets, so I bought something similar from Boule Boule. I got their S’mores Bubblits which are essentially fried mini donut balls with s’mores toppings. They were so yummy and I loved the texture of the bubblits! They were hella sweet though, so if I ever go back I will try them without all the toppings. If you don’t have a place near you that sells beignets, then here is a recipe so you can make your own.

Ingredients:

  • Beignets

  • Marshmallows

  • Chocolate syrup

  • Graham crackers

Directions:

  1. Put beignets on a plate.

  2. Roast marshmallows and arrange them on top of the beignets.

  3. Drizzle with chocolate syrup.

  4. Crush graham crackers into crumbs and sprinkle on top of beignets. Enjoy!

Choco Pie/ Wagon Wheel/Moon Pie S’mores

None of us were able to make these from scratch but here is a recipe you could try. You can enjoy these yummy treats and find Choco Pies in your local Korean grocery store and Wagon Wheels/ Moon Pies in your regular grocery store. All of them are available online as well. These treats are essentially a s’more all-in-one, but if you want to be extra, you can use each pie as the end of the s’more sandwich and put roasted marshmallows in between.
